Bacon Fried Rice
1/2 lb. raw bacon, cut in 1/2 inch pieces, fried and drained
(Can use less bacon or ham bits)
2 eggs well beaten
3 T. oil
3 c. cold cooked rice (must be cold or it will be a gummy mess)
1 1/2 T. dark soy sauce (can use less)
1/4 c. onion, chopped
Heat 1 T. oil in small wok or skillet. Pour in beaten egg.
Remove from pan when slightly firm.
Heat remaining oil and add the 3 cups rice and minced onion.
Toss for about 2 minutes, add the soy sauce and mix well.
Add the eggs and bacon bits, breaking up eggs with spatula.
Mix well. Serves four.
