Pumpkin Bars

Pumpkin Bars

1 C oil
4 eggs
2 C canned pumpkin (15 oz. can)
2 C sugar
2 C flour
2 t baking soda
1/2 t salt
2 t cinnamon

FROSTING

6 oz. cream cheese (softened)
1 1/2 stick butter (softened)
3 /12 - 4 C powdered sugar
2 t vanilla

Combine the first 8 ingredients. 
Beat until smooth.
Pour batter into 10x15 inch jelly roll pan.
Bake at 350 degrees for 20 minutes. 
Cool. 

Cream frosting ingredients together and spread on cooled bars.
(If you want less frosting you can use 3 oz. cream cheese, 1 stick butter, 
2 c. powdered sugar 2 t. vanilla)

This is good to make ahead and let set a day or two before serving.
