Chicken and Rice

Chicken and Rice Casserole


Have ready 2 cups cooked rice

Sauté in 1/3 cup butter
   1 small minced onion
   1/2 cup (or more) frozen mixed vegetables (or all peas)

Blend in
   1/3 cup flour and 1 teaspoon salt 
   Cook stirring constantly for a few minutes
   Stir in 2 cups milk and 1/2 cup broth (or water)
   Cook on medium and stir constantly until thick
Fold in 2 cups cooked chopped chicken and heat through      

Put the cooked rice in a greased 2 quart casserole dish
Pour the chicken mixture over the rice.

Mix 1/4 cup panko, 1/2 cup grated hard cheese and 2 Tablespoons butter.
Spread on top of the casserole and bake 350 degrees for 30 minutes.
