Oatmeal Bread
1 cup boiling water1/2 cup oatmeal (quick or regular)
Pour boiling water over oats and let sit a few
minutes.
Add:
1/4 cup honey
1 1/2 Tbsp. butter (let it melt in the oat mixture)
1/3 cup cold water
Add:
1/4 cup honey

Scant 1/4 cups instant potato flakes (optional)
Whisk together and add:
2 1/2 cups flour
1 tsp. salt
1 tsp. yeast
If using a bread machine add the liquids, then the dry ingredients.

Put it on the dough setting.
When finished, form into a loaf and put in a greased loaf pan.
Cover and let rise until double, 45-60 minutes
Bake at 375 degrees 40 minutes.
If not using a bread machine knead the dough several minutes,
put in a greased bowl, cover and let rise until doubled. Then punch down
and proceed as above.
This recipe can be doubled, but it may overwork the bread machine.
