Potato Donuts

 1 package yeast dissolved in
1/2 cup warm water

Measure into a big bowl:
3/4 cup sugar
1/2 cup shortening
1 1/2 t. salt
Instant mashed potatoes for 4 servings (dry)
Add 2 cups scalded milk, let shortening melt

Add 2 beaten eggs and 1 cup flour

Add the yeast/water

Add 5 1/2 - 6 cups flour and mix well to make a soft dough.
Shape into a ball and put in greased bowl to rise until approximately
doubled in size. (May be kept in the refrigerator overnight)

Punch down and let stand 20 minutes

Roll out 1/2 inch thick and cut into donuts

Let donuts rise on floured board. Fry in hot oil, drain and glaze

Glaze can be made from hot coffee and powdered sugar.
